The Echo RSS plugin can extract full content from articles, even if you don’t use the RSS.app.

Well, it seems that they don’t add tags/categories in their content.
What about using the RSS feed you linked, directly in plugin settings? https://arabnewswire.com/feed/ – I checked and this feed contains also tags/categories for posts.
Is this not ok for you?

I checked your site but I don’t see the feed URL you mentioned configured in the plugin: https://arabnewswire.com/feed
Also, the RSS.app feeds which are configured on your site, don’t contain categories for posts they contain in the content of the RSS feeds, so importing tags for RSS.app feeds is not possible because of this (tag/category information is not present in feeds).
